Am I correct in my understanding?...

I can leave my Premium shop set up as I like - looking good to visitors who go directly to my premium on CafePress...

BUT...

I can have my website's CPShop store customized with different text colors, background, etc. etc. - completely independent of that Premium Shop's settings?

I want to make changes to my CPShop store that are a little different than the Premium and wanted to know if I need to start by customizing my Premium's settings (colors, etc.).

I got the impression that CPShop could "override" all my premium settings for the benefit of looking good within my website - all the while leaving the CafePress hosted store alone - looking the way I like it over there (but different) for those that visit the CafePress route.

If so - what is the most normal way of achieving this?... html in cpadmin.cgi?... html in my cptemplate.cgi?...

You are correct in your understanding.

You can achieve it any way you please.  I'd personally start by modifying your cpshop template file, with the body tag and/or style sheets.
